Instructions:

Place the sharpener on a flat surface and hold the sharpener with one hand and the knife handle with the other.

Step 1: Diamond coated bars (Preparation sharpening)

-       Use before sharpening if the knife edge is damaged to balance the blade.

-        Slide the blade along the diamond bars as shown in the drawing, pressing down lightly on the edge of the blade.

Step 2: Sheets of Tungsten Carbide (Coarse sharpening)

-       Only to be used if the blade is very blunt.

-       Slide the blade along the metal sheets as shown in the drawing, pressing down lightly on the edge of the blade. Repeat until the blade is restored to the desired sharpness.

Step 3: Ceramic bars (Fine sharpening)

-       Slide the blade without exerting pressure in order to remove rough edges left in step 2. Repeat the operation until a smooth edge is obtained.

-       For maintaining a sharp blade you can just perform this operation without first doing step 2. Recommended once a week.
